  • Corn Starch: Corn starch is used as a thickening agent. You can adjust the amount to achieve your preferred soup consistency.

STEP BY STEP INSTRUCTIONS FOR THE CREAMY MUSHROOM SOUP:

1. Clean the Mushrooms: The most common method to clean the mushrooms are not to wash them, you just need to brush off each mushroom with a small brush or a damp cloth or paper towel. If you’re just like me, feel that brushing off each mushroom takes too long, try my method – trust me, you will find how efficient this method is after you have tried it. To clean the White and Brown Mushrooms, place the mushrooms in strainer basket. Gently rinse the mushrooms under running water, allowing the dirt to wash away. Be cautious not to soak them. After rinsing, remove the mushrooms from the strainer basket and pat them dry with a paper towel or clean cloth. This method ensures that the mushrooms are clean without absorbing excess moisture, which can impact their texture and flavour.

2. Cut the Mushrooms: Slice the mushrooms thinly. Set aside.


















Chop minced garlics and diced onions

3. Chop and Dice the Aromatics: Peel and finely chop the garlic cloves and dice the large onion.

















4. Saute the Aromatics: In a large soup pot or Dutch oven, melt the butter or heat a bit of oil over medium-high heat. Add the chopped garlic and diced onion. Saute for a few minutes until they become soft and fragrant.





5. Add the Mushrooms and Seasoning: Add sliced White and Brown Buttons, dried herbs and ground black pepper to the pot. Stir to incorporate the seasonings with the mushrooms. Cook them and stirring occasionally until they release their moisture and tender, which takes about 8-10 minutes.


6. Simmer with Chicken Broth / Stock: Pour in the chicken broth / stock. Bring the mixture to a gentle boil. Reduce the heat to medium-low heat and let the soup simmer for about 15 minutes without a lid, allowing the flavours to meld.




7. Blend the Soup: Use an immersion blender or transfer the mushroom soup to a countertop blender to puree it until smooth. WARNING: Be cautious when blending hot liquids, it’s important to allow them to cool slightly if using a countertop blender and make sure to remove the feeding cover to allow steam to escape while blending.


Return the blended mushroom soup to the pot.

8. Return to the Pot: Return the blended mushroom soup to the pot.


















Stir in the heavy cream to the mushroom soup and let the soup simmer for about 5 minutes.

9. Add Heavy Cream: Stir in the heavy cream to the soup and let the soup simmer for about 5 minutes. Stir well to combine, creating a creamy and velvety texture.















10. Thicken the Soup: In a small bowl, mix the corn starch with a couple of tablespoons of water to create a slurry. Slowly pour the slurry into the soup, stirring continuously. Cook for a few more minutes until the soup thickens to your liking.

11. Adjust Seasoning: Taste the soup and adjust the seasonings, such as pepper and salt, to your preference.

12. Serve and Enjoy: Ladle the creamy mushroom soup into bowls. You can garnish it with a few mushroom slices, a drizzle of cream, or fresh parsley. Serve the soup hot and savor the rich, comforting flavours.
